list of favorite summer meals

Healthy EatingIn Maine, it is only just starting to warm up and I am now beginning to pull from my memory of last year’s meals some of my family’s favorite summer dishes. Summer eating means summer cooking: more crockpot and grill, less oven. Summer means food fresh from the garden with lots of color. Summer means preparing dishes that will cool you down after a long day in the sun. Here is a list of some of our favorite summer meals.  And my favorite part – eating outside!  Whether it be on the deck, on a blanket on the lawn, or packed up and taken to a remote location, food always tastes better outdoors.

  • Anything from the grill:  Chicken drumsticks, cheeseburgers, hot dogs, and steaks, for a treat
  • Salads: Greek spinach salad, potato salad, pasta salad
  • Stir fry:  Including fajitas, lo mein, and falafel
  • Specialty sandwiches:  muffulettas, BLTs with fresh tomatoes from our garden, and tuna or chicken salad with chunks of fresh cucumber for crunch
  • Picnic items:  summer sausage, blocks of cheese, deviled eggs, and fresh-picked berries
  • And for after dinner:  thick watermelon slices, homemade ice cream, and berry cobbler

    In the summer, we grill a lot! We grill meat, veggies, the occasional fruit… When it gets really hot outside and I don’t want to heat up the kitchen, I cook everything on the grill. We wrap just about anything in foil and it turns out good! To accompany our grilled food, I love pasta and vegetable salads! I like to get creative and throw lots of different stuff together.
