Some of these might involve a bit of prep work, and others depend on the use of convenience foods (such as frozen meatballs), but all are quick when in a pinch for a healthy dinner.
1. Fajitas
Tortillas, onion, green pepper, cooked chicken or steak strips, shredded cheese, and sour cream. Stir fry vegetables in 1 T oil, add meat, spoon onto tortilla, add extras
2. Meatball Subs
Frozen meatballs, spaghetti sauce, mozzarella cheese, sub rolls
Cook meatballs in spaghetti sauce for 20 minutes. Spoon into sub roll. Add cheese.
3. Stromboli
Refrigerated pizza dough (cut into fourths). Layer ham, salami, provolone, pepperoni onto dough. Roll up. Bake in 400 degree oven for 15 minutes. Dip into pizza sauce.
4. Chicken Nachos
Cooked diced/shredded chicken, salsa, shredded cheddar, tortilla chips
Spread tortilla chips onto pizza sheet. Heath chicken and salsa in skillet. Spoon over chips. Sprinkle cheese over top. Bake at 350 for 12 minutes.
5. Scrambled Noodles
5 eggs, 3 packages of ramen, 1 to 2 cups of cooked vegetables
Cook ramen noodles according to package. Scramble eggs in skillet and add 1 or 2 seasoning packets from ramen packages. Put on low heat and add cooked noodles and vegetables.
